Strawberry Banana Frozen Yogurt Bites
1 smart point WW



24 “Nilla wafers
2(5.3) containers strawberry banana or strawberry greek yogurt
1/2 C dised fresh bananas
1/2 C diced fresh strawberries
24 Fresh strawberry slices(8 berries)
24 mini paper liners

  1. Place mini paper liners into each cup of a mini muffin tin, push wafer into the bottom of each liner.
  2. In bowl combine the 2 containers of yogurt with the bananas and diced strawberries, stir oil combined. Spoon the yogurt into the tins, place strawberry slice on top freeze for 3 hours.

Pecan Cream Cheese Cookies


November 2015 Potluck dinner, Helen's Turkey Slider recipe.

This recipe is for ham but switch for turkey.
I put lingonberry on guild night---cranberry works. 
Add stuffing-that would be great!
Doubling the recipe is perfect for fitting into a large casserole dish. 
Perfect for football gatherings, buffets and potlucks.



Baked Ham and Cheese Party Sandwiches

"These small, delicious sandwiches are perfect for any party. They are so good that even the pickiest of eaters will eat these."

Ingredients

  • 3/4 cup melted butter
  • 1 1/2 tablespoons Dijon mustard
  • 1 1/2 teaspoons Worcestershire sauce
  • 1 1/2 tablespoons poppy seeds

  • 1 tablespoon dried minced onion
  • 24 mini sandwich rolls
  • 1 pound thinly sliced cooked deli ham
  • 1 pound thinly sliced Swiss cheese

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  2. In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish. Layer about half the ham onto the rolls. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls.
  3. Bake in the preheated oven until the rolls are lightly browned and the cheese has melted, about 20 minutes. Slice into individual rolls through the ham and cheese layers to serve.




October 2015 Meeting Margareta's Meringues

Meringues

1/4 to 1/2 lb. dried fruit of your choice. Remember dried fruit.
1/2 to 3/4 cup diced nuts
4 egg whites
1 1/2 cups sugar

Beat egg whites to very stiff. Add sugar keep beating to keep stiff.
Add fruit and nuts
Drop on parchment paper covered cookie sheets. 
Bake in slow oven and on lower racks at 300F about 25 to 30 minutes

Pumpkin cheesecake dip
8 oz. cream cheese(softened)
8 oz. cool whip (thawed)
1 1/2 cup powdered sugar
1 cup pumpkin purée
1 Tbsp pumpkin pie spice
1 tsp vanilla
1/8 tsp ground cinnamon

Put cream cheese and cool whip into bowl and mix  on med. speed till smooth (about 2 min)
Keeping on med. speed, mix in pumpkin purée, powdered sugar, pumpkin pie spice and vanilla until combined.
Place into bowl of choice. Sprinkle with cinnamon and chopped pecans if desired. Refrigerate at least 30 minutes.

Strawberry Cream Cheese Cookie Tarts

Ingredients:
1 pouch Betty Crocker sugar cookies mix
    butter and egg called on cookie pouch
1 container 8oz strawberry cream cheese spread
1 cup powdered sugar
2 tablespoon milk
1 aerosol container BC decorating icing and sprinkles if desired

Directions:
1-Make cookie dough as directed on pkg and roll dough into 32 (1"balls) place in
greased mini muffin cups. Press each ball into bottom and up sides of muffin cup. Bake 350 for 12 to 15 or until just edge
just begin to brown. cool 20 minutes. remove from pan cool completely
2-Mix cream cheese, milk and powdered sugar with mixer on medium speed until smooth. fill each cup with round teaspoon of filling. top with icing and sprinkles. refrigerator.

I use more cream cheese and less powdered sugar. So if this is what you want to do buy 16oz cream cheese. You may also 
need to press cookies down again when they come out of oven.



January 8, 2014 Meeting:

Butterfinger Pie
  • 6 (2 1/8 ounce) butterfinger candy bars, crushed
  • 1 (8 ounce) package cream cheese-room temp
  • 1 (12 ounce) carton Cool Whip
  • 1 graham cracker crust--I used a premade shortbread pie crust. 



 Whip together room temp cream cheese and cool whip add crushed candy bars. But leave some to top pie with.


Took about 10 minutes--which leaves more time to quilt.

Sweet Potato Casserole

November 2014

3 cups cooked, mashed sweet potatoes
1 cup sugar
2 eggs
½ cup milk
½ stick butter
½ tsp salt

Blend; pour into buttered casserole 

Topping:

½  stick margarine
1 cup brown sugar
½ cup self rising flour
1 cup chopped pecans
(1 cup coconut, optional)

Sprinkle on top
Cook 350 degrees for 45 minutes or until heated through
